COMMIS CHEF

The purpose of this position is to assist the chef in all allocated tasks.

Minimum Experience and Qualification

      • Grade 12
      • 2 years’ experience in a 5-star hotel or similar environment
      • Must be motivated, enthusiastic, and energetic
      • Must be a team player, with a positive attitude
      • Must be willing to work shifts
      • Must be able to work under pressure

Key Performance Objective

      • Responsible for the preparation and service of all menu items delegated to you,
      • Carrying out any duties delegated to you from C.D.P, sous chefs, or head chef in a professional manner and to the best of your abilities,
      • Ensure the section is thoroughly set up for daily service e.g., Kitchen equipment, utensils, bain-marie etc,
      • Cleaning of fridges and areas used for food and equipment storage,
      • Liaising with C.D.P/ Sous chef/ Head chef as to what food items need to be ordered on a daily basis,
      • Ensuring all food items – meat, vegetables, starches, and sauces etc. are correctly stored, portioned and prepared to the highest standard possible,
      • At the beginning of a shift all produce must be checked so that there is enough for the service ahead and of the highest quality,
      • Ensuring equipment is correctly locked away after service,
      • Stoves, ovens, and grills have been switched off at the end of service and the kitchen has been cleaned to the required standards,
      • The section must be kept clean, tidy, and orderly at all times ensuring there is always enough cleaning materials,
      • All food items and dishes served from your section are your responsibility and you shall be held accountable for them,
      • Looking after all kitchen equipment and seeing it is stored correctly e.g., Mandolin, pasta machine, bamix, pastry cutters etc. and,
      • Assisting the C.D.P. in the smooth running of the section.
